I've always loved experimenting with food. Pasta has always been one of my favorites. You can toss it together with anything and have it come out absolutely delicious. Yesterday I was in a hurry to get out the door and needed to throw together something that was healthy, quick, and tasty. So I chopped up some squash and onion and sauté it all in extra-virgin olive oil. Mixed it with brown rice pasta, sprinkled with feta cheese, pepper, and Veggie Shreds mozzarella. It's a work in progress but I liked it and it was definitely better, as most pasta is, the second day after its had a chance to sit in the refrigerator and sit. I'm thinking next time I might try it with a few juicy cherry tomatoes in another wild-card ingredient that I haven't yet decided what will be. I want it to be something rather unexpected. I guess all that's part of the fun of experimentation. :)

So I have been in the worst workout rut ever as you might be able to tell from my blog I haven't written in a while and there is a reason for it. Your's truly has not been working out, not doing much of anything other than working myself to death and dealing with a family crisis.
Unfortunately my poor dad was in an accident returning home from his vacation in Florida. He actually lived after a head on collision with a semi tractor-trailer on Interstate 10. Thankfully he's expected to make a full recovery but it will take a long time. I've been spending a lot of my time helping out where I'm needed and traveling back and forth from home to the hospital to be with him. Now that he's home were very relieved but he's not able to do a lot of the things, the simple things, we all take for granted. But life is starting to get back to normal and I'm paying a lot more attention to what I'm eating and when I'm working out. I'm disappointed that I haven't met my weight goal yet but life happens, things happen, and sometimes we fall off the track. I'm ready to start all over and try to do the best I can to maintain a healthy weight and a healthy workout routine.
Last week I started off slowly going to the gym. I did a spin class for 45 minutes with one of my coworkers, which was a lot of fun...but will take some getting used to. I also did a few 30 minute cardio exercises on both the elliptical and the treadmill. I forgot how great it feels after a workout, especially when you've had a rough day and a very stressful summer.
One thing I wish I could have more time to do is swim. Swimming has always been one of my very favorite summer activities but unfortunately my life hasn't slowed down enough to take a few moments to hit the swimming pool. But hey, summer tends to linger here in Mobile so maybe I can take my time.
With my diet, I had a great momentum going until daddy's accident. He was actually hospitalized outside of Mobile which meant I had to live in a hotel for a little while. And while living in a hotel, I ate whatever was close by including Waffle House, Taco Bell, and Dothan Alabama's finest Southern fried buffet. I don't really know how much weight I actually put on but I can tell you however much I lost before was all gained back and then some. But that's okay I feel like I've found my groove and I'm eating fruits and vegetables plus I'm watching my portions. I'm also not eating out quite as much, which was responsible for a lot of the weight gain I've had.
We'll have to see how the next few months go. Hopefully I can stay on track from here on out.
