quick pasta

I've always loved experimenting with food. Pasta has always been one of my favorites. You can toss it together with anything and have it come out absolutely delicious. Yesterday I was in a hurry to get out the door and needed to throw together something that was healthy, quick, and tasty. So I chopped up some squash and onion and sauté it all in extra-virgin olive oil. Mixed it with brown rice pasta, sprinkled with feta cheese, pepper, and Veggie Shreds mozzarella. It's a work in progress but I liked it and it was definitely better, as most pasta is, the second day after its had a chance to sit in the refrigerator and sit. I'm thinking next time I might try it with a few juicy cherry tomatoes in another wild-card ingredient that I haven't yet decided what will be. I want it to be something rather unexpected. I guess all that's part of the fun of experimentation. :)
